4 skinless, boneless – Chicken Breasts, cut into ½ inch strips; half cup – Broccoli florets; one cup – strips of Red/Green Capsicum; 2 tsp – finely chopped Ginger; 2 tsp – finely chopped Garlic; 1 tbsp – Brown Sugar; 2 tbsp – Honey; 4 Tbsp – Soya Sauce; 2 tbsp – Chilli Sauce; 1 tsp – Mustard sauce; 3 tbsp – Oil; Salt and Pepper to taste.
Heat the butter in a pan and add the sliced mushrooms to cook till the mushrooms release water and become dry. Remove sauted mushrooms from the pan and cool. Toast the bread slices in the pan till slightly little crisp. Mix sautéed mushroom in cheese sauce and season with salt and pepper. Spread the mix on the bread slices and top it with cheese slice and green chillies. Prepare 2 sunny side up eggs in a pan and place them on the top of the prepared bread slices. Bake in the oven for 2 minutes till the egg is slightly cooked, depending on the consistency of doneness you would prefer (runny egg or well done). Garnish it with chopped coriander leaves and serve it hot.
