Chicken Souvlaki With Tzatziki Sauce

Ingredients:

Marinade:  1 Lemon; 1 tsp. dried or fresh Oregano; 2 tbsp. Olive Oil; 4-5 cloves Garlic (finely chopped); 1 tbsp. chopped Parsley; 500gms skinless and boneless Chicken Legs; 1 medium Zucchini, quartered lengthwise and cut into (1/2-inch-thick) slices; Red and Yellow Bell Peppers, half each quartered and cut into ( ½ inch thick slices); 6-8  Bamboo Skewers; half Ice berg Lettuce (shredded); Salt to taste; Crushed Black Pepper to taste; 5-6 Pita Bread.

Tzatziki  Sauce: 1 peeled, de-seeded and shredded Cucumber; 1 cup Yogurt; 6-7 Mint leaves (chopped); Lemon Juice to taste; Salt to taste; Cumin Powder (optional).

Method:

Wash the chicken legs and cuts slits in them and transfer to a bowl. Marinate the chicken with the above ingredients except the iceberg lettuce and leave it to rest in the refrigerator for at least an hour. Soak the wooden skewers in water and leave aside. To make the Tzatziki, combine all the above ingredients and leave it in the refrigerator for later use. Remove the marinated chicken from the refrigerator and start arranging on wooden skewers along with the zucchini and the bell peppers. Heat a grilling pan or set the oven at 180c on grill mode. Add oil, once oil is hot add these skewers on the pan and cook until the chicken is cooked about 10 – 15 minutes. Once cooked leave aside to rest. Take each pita bread, add Tzatziki sauce all around the bread, add the chicken from the skewer, top with shredded iceberg lettuce. Roll it and enjoy.

Tip: In the roll you can add other vegetables of your choice – cherry tomatoes, green and black olives, feta cheese or even caramelized onions.

Smashed Raspberry Lemonade Cocktail

 

Ingredients:

2 ounces Triple Sec; 2 ounces Limoncello; 1 handful of Raspberries; Juice of two Lemons; Club Soda; Raw Sugar.

Method:

To muddle your fruit, add a handful of fresh raspberries and a sprinkle raw sugar onto the bottom of a glass. Use a muddler (a wooden spoon will work too) to smash your fruit until it has the appearance of jam. Add the Triple Sec, Limoncello and lemon juice to your glass. Add ice. Top if off with club soda. Give it a quick stir and enjoy! If you prefer a non-alcoholic version, try adding the smashed raspberry step to a regular glass of lemonade. It will be instantly prettier and add a lot of flavour!
