Garlic-Yogurt Baked Chicken
Ingredients:
4 Chicken Breasts, halved; Fresh Ground Pepper, 6 Garlic Cloves, minced; 1/2 Cup Plain Yogurt; 1/2 tbsp. fresh Coriander Leaves; 1/4 Cup bread crumbs, Oil for greasing; Salt to taste.
Method:
Lightly pound chicken just enough to even it out. Place chicken in a large bowl and season with salt and pepper; set aside. In a separate bowl, combine garlic, yogurt, and coriander; mix until combined. Pour beaten yogurt over chicken; mix until chicken is thoroughly coated. Cover with plastic wrap and refrigerate for 4 to 6 hours. Preheat oven to 375. Grease a baking dish with cooking oil. Remove chicken from bowl and shake off any excess yogurt mixture. Place chicken on the greased baking dish. Sprinkle bread crumbs over chicken breasts. Bake for 40 to 45 minutes, or until chicken is done. Remove from oven and serve with sautéd vegetables and bread rolls or steamed rice.
