30gm Iceberg; 20gm Romain; 15gm Rocket; 10gm Baby Onion; 15gm Green Zucchini; 15gm Yellow Zucchini; 10gm Cherry Tomato; 4 segment Orange; 5gm Pine Nuts; 5gm Pomegranate; 70gm Chicken thigh.
For the Dressing- 20ml Pomegranate molasses, 6ml orange juice, 1-2 gm orange zest, 6ml lemon juice, pinch of salt and black pepper, 12ml olive oil.
Clean and wash the lettuce, keep aside. At the same time, bake the raw chicken thigh at 180 degree for 10 minutes and keep aside. Slice the green zucchini, yellow zucchini and keep aside. Take a bowl, add iceberg, rocket and romain lettuce and add the dressing. Garnish with orange segment, fresh pomegranate and roasted pine nuts, slow roasted onion and cherry tomato. Finally, add the baked chicken and mix with the salad dressing.
